Healthy Eats: Summer Salad

I came across this recipe one day when we had a family BBQ at my aunt’s house. She said the idea came from a colleague of hers at work who let her try it. It does not have a name so I gave it one – Summer Salad. This is actually one of the best tasting salads I have ever tried and it’s not ruining anyone’s diet. Mainly because it does not have any dressing and relies only on the natural taste of each ingredient. I asked my aunt how she made it and thought of sharing it with you. Of course, I tweaked it a little bit and used the fruits and veggies I have on stock. Again, it depends on your preference if you want to use other ingredients but the goal here is to stay healthy and not use any dressing.

Summer Salad

Prep Time: 10-15 minutes

Serving Size: 4-6


1 peeled cucumber

1 peeled carrot

1 apple

2 peeled kiwis

10-15 pieces seedless grapes


Slice all ingredients into small dice except the kiwis and grapes (you can slice them on whatever shape or size you want it).

Mix them all together.

Refrigerate for 15-20 minutes then serve.

*Note: I used apple, kiwi and grapes for this recipe as I am currently on a low sugar diet due to PCOS (Polycystic Ovarian Syndrome) and I am also insulin-resistant. You can opt to replace these fruits with mango but please eat it on moderation. Eating a lot of mangoes also means A LOT of sugar intake (+ calories!). Just saying. 

This salad is so refreshing, healthy and easy to make. It can be eaten by itself or alongside a main dish. The slicing will take much of your prep time but it’s definitely worth it.
